Easiest, Softest & Fluffiest Pancakes Recipe EVER
These pancakes are soft, light and fluffy and have the perfect sweetness. This easiest Pancake recipe is best for lazy weekends when you don’t want to put a ton of effort into making the breakfast. Just mix a few ingredients up and make yourself a decadent breakfast under 15 minutes.

As you guys know, by now, I am a huge fan of food and I crave for sweets a lot more than a normal human. Fortunately, my husband is like that too. :3
So when I moved in with him, he started asking me to make food for him. I knew the basics, so that was easy.
But it was not long ago when he started asking for complex foods. Haha, I was just a beginner back then, so even making Pancakes or Cinnamon Rolls, seemed so tough. I still am a beginner but I know how to make pancakes now, lol.
So it was a Friday, (in Saudi Arabia, our weekend is on Fridays) and he asks me to get ready to grab Pancakes from McDonald’s. I told him to let’s just stay in, I’ll make Pancakes.
I had no idea how to make pancakes, back then. Anyways, I was pretty sure my mom and mom-in-law won’t leave me alone.
So I went ahead and called them and my mother-in-law told me this recipe.
I tried it, and I was shocked at how awesome the pancakes turned out. It was my first try, yet it seemed as if some professional cook made ‘em.
This is my only go-to-recipe for Pancakes. I love it so so much. And I really wanted to share it with you guys.
So here we go!
DETAILED STEP-BY-STEP PROCESS (WITH TIPS)
First things first, let’s prepare the batter.
Add your dry ingredients in a large bowl, which includes flour, sugar, baking powder, baking soda, and salt. Whisk everything together and make a well in the center.
Crack your egg in a separate bowl and whisk it. Now add your wet ingredients into the dry mix, including eggs, buttermilk, vanilla extract and melted butter or oil.
Note: If you don’t have buttermilk, don’t worry you can make it at home in less than 5 minutes.
Take a cup of milk and add two tablespoons of either lemon juice or vinegar and give it a good mix. Once your milk starts to curdle, it’s ready to be mixed into your rest of the ingredients.
Give everything a good mix, until everything is just combined, you don’t want to overmix this batter.
Cover the batter and leave it in the fridge for half an hour.
After half an hour, heat a pan (non-stick preferably) on medium heat and add a teaspoon of butter.
Add 1/4 cup of batter on to the pan and let it cook for around 2 minutes.
You’ll see small bubbles appearing on the top surface of the pancake and that’s when you know they are ready to flip. Slide a thin spatula underneath the pancake and carefully flip it, letting the other side cook for another 2 minutes.
Make a whole batch of those yummy pancakes and stack them on top of each other and that’s how they will stay warm. Top your pancakes with butter, maple/pancake syrup or fresh fruits or even whipped cream.

Trust me, guys! You’ll love it. Just make sure not to make them on high flame, they burn really quickly. And do not overmix or the pancakes won’t be soft enough.
